Menu Monday...and Stuff

Warning: Boring Post below.

Well, I have been feeling yucky for the past 5 days, and on Friday I went to the doctor. Apparently I have laryngitis and maybe a sinus infection. My throat has been hurting int he morning and at night, I've had a GLOB of mucous (TMI, I know) in the back of my throat, and I've been coughing a lot. Friday it was so bad, I left work at 11, which I never do! The doctor said there is fluid in my ears (ewww) and that I may have an infection. So I did what anyone would do when they went to drop off their Rx for a Z pack. I bought pizza for dinner, some onion dip and Fritos for comfort food, and 4 boxes of Weight Watchers ice cream. Because we all know that will balance out the four cheese CPK pizza I ate 3/4 of on Friday night.

I totally lost my voice on Friday and am getting it back barely today. Hubs said it was a nice reprieve. I slapped him.

We had our buddies over for dinner last night: J, L, and J plus the kids-I got a vision of what our house will look like on kid # 3. It wasn't pretty, but man it was fun! Wine, caramelized onion dip, reduced fat Triscuits-again, they balance each other out. We were going to have delicious, fall off the bone ribs that hubby had been smoking ALL day, but they accidentally caught on fire and were BLACKENED. Bad. So he went to the store and bought 2 rotisserie chickens. We feasted on chicken, WW mac and cheese, baked beans, and coleslaw. Then, we had an incredible cookies and cream pie that L brought. Wow. Way to fall off the wagon.

Today, I will re-introduce myself to the tracker.

So, I need to get back on the wagon in order to meet my goals. Remember???

Also, this week's menu is a bit of a pantry/fridge/freezer clean out. I have deduced that one reason I am so stressed out is my cooking-I am choosing to cook meals every night, and that is a lot of work and prep, so I am taking some help where I can get it, and we are eating some easier meals twice in one week. I think we will survive.

Let's take a look at the menu, shall we:

Monday-Slow cooker turkey chili (never had it last week-I have a phobia of leaving the crock pot on all day and burning my house down. I need to buy a timer.)

Tuesday-Grilled chicken, box of noodles (like noodle roni or something), green beans

Wednesday-out to dinner for my 31st birthday! Yikes!

Thursday-Turkey burgers, baked Lay's, green beans

Friday-Penne a la Betsy (Pioneer Woman), salad

Saturday & Sunday-no clue-probably turkey burgers again maybe with other sides

So, that has been our exciting weekend in a nutshell.

Bullet Point Sunday and Menu Monday

So, this weekend was a blast! I have to recap in bullet points, then I'll give you a menu for the week.


*We had our dear friends J, L, their kids, and J over on Saturday night-ha-larious! See pics below.



*L and I may or may not have consumed a LARGE amount of wine. Like 10-12 WW points worth-speaking of, I had saved ALL my weekly points for last night-it was well worth it-I used all but like 10 of them!


*Auburn played an awful football game and lost to Kentucky. Nuff said.


*I broke out one of my old "fall" Coach bags and my luscious wrap sweater for church today.


*I went to group cyntergy at the gym on Saturday morning-it's yoga+pilates. It was rad and very relaxing. After that I jogged for 20 on the treadmill. By 12:00 I was totally chilled out and felt really good about myself.

*Emma crapped OUT OF HER ONESIE in the Tar-jay while riding in her Baby Bjorn. Awe-summ.

Emma is rocking her pumpkin hat, cute Halloween PJ's, and a skeptical expression!





Umm, yeah-we ate some meat last night. Turkey legs, chicken, and strip steaks.
We may or may not have had side dishes that were vegetables.

J was tearing up this turkey leg-it was his one request for food.

Sunday-Santa Fe soup, baked tostitos
Monday-Spaghetti, Green Beans, Salad
Tuesday-White Chicken Chili, Crackers
Wednesday-Salmon, Brown Rice, Green Beans, Steamed Carrots
Thursday-Tacos, baked tostitos with Chili's salsa
Friday-Asparagus Pasta with Toasted Pecans, Salad
Saturday-Bunless Burgers, Baked Lays, Green Beans

Bullet Point Sunday and a Menu for Monday

I am copying b.e.g.'s post from last week in keeping with the bullet point post. Thanks, b.e.g.!

*I totally went "coupon shopping" yesterday and got a lot of stuff. Victoria's Secret panties 7/$25, New York and Company 30% off, Old Navy 10 % off, plus all their cute a** shirts were $4! (I got 13 shirts for 87$). This was necessary since I just had a baby and have muffin top and must hide it. Don't tell husband about the shopping.
*We are starting Weight Watchers this week.
*Emma got totally spoiled by her grandparents this weekend-her Granny FeFe brought her sooo many clothes! This is her crib, full of the clothing.
*I heart my "Chile's Salsa" recipe-that is better than Chile's. No offense Chile's.

*Today is the first day I have had to really grocery shop and menu plan since Emma has been born. Yikes-the fridge looks like it's been on restriction. I have to go to he** (Walmart) to grocery shop-GUN.NOW.
OK, here is the Chile's Salsa recipe (Edwards style)-cause I know my mom will ask for it.
1 14.5 oz can mild Rotel
1 14.5 oz can whole tomatoes (plus the juice)
1 jalapeno-diced-I seed it-the first time I made it I didn't, and it was hot as he**
1/2 yellow or sweet onion, diced
1/2 tsp garlic salt
1/2 tsp cumin
1/4 tsp sugar
some cilantro (probably about 4 sprigs) chopped-we have this growing outside thanks to my dad
1 lime-juiced
In food processor, place jalapeno and onion and process for a few seconds-to "dice" it. Add both cans of tomatoes, salt, sugar, cumin, cilantro, and lime juice. Process all ingredients on pulse until well blended. Do not puree. Place in covered container and chill. Serve with your favorite chips!
I love the blue corn Tostitos, but they are sooo not lowfat. Now that we are on WW, we will be eating baked or fat free Tostitos. This salsa would be good on top of chicken or anything else that needs some flavor.
Finally, as started by Mrs. Newlywed, here is my Menu Monday for the week. I know it's not Monday, but I roll out on Sundays with my planning and shopping.
Monday-Beef and Sausage Kabobs with Veggies and Rice
Tuesday-Neely's Chicken Salad with Broccoli and Yellow Rice
Wednesday-Spicy Bean and Cheese Burritos with baked chips and Chile's salsa
Thursday-Poppyseed Chicken with Brown Rice and salad (friend may come over and bring dinner, so this is already made and frozen)
Friday-Thursday's dinner if friend comes, if not, Ranchero Onion Burgers* with vegetable medley (broccoli/carrots/snap peas) and green beans

*Ranchero Onion Burgers (from Incredibly Easy Weeknight Meals)
1 lb lean ground beef
1/2 C salsa (we will use homemade Chile's style)
1/2 C shredded monterey jack cheese
1 1/3 C French's onions-divided
1/2 tsp garlic powder
1/4 tsp ground black pepper
Combine beef, salsa, cheese, 3/4 C onions, garlic powder and pepper in large bowl. Shape into 4 patties. Grill 10 minutes over medium heat, turning once. Garnish with additional salsa and top with remaining 2/3 C onions.
We also add some cheese to the top-and we don't use buns. This is very healthy if you use lean ground beef and serve with vegetables. Yum!
